Archaeologists excavating ancient Egyptian pyramids and tombs have uncovered pots of honey over 3,000 years old that are still completely edible! But what makes honey virtually immortal?

The Magic of Natural Chemistry

Honey's eternal shelf life comes down to its unique chemical composition. First, honey has extremely low moisture content (around 17-18%). Without water, bacteria and microorganisms cannot survive or reproduce. Second, honey is naturally acidic, with a pH between 3.2 and 4.5, which kills off any pathogens trying to grow.

Furthermore, when bees regurgitate nectar into honeycombs, they add a special enzyme called glucose oxidase. This enzyme produces small amounts of hydrogen peroxide (a natural antiseptic). Together, these factors make honey one of nature's greatest biological preservatives!
